1/2 cup (1 stick) of butter, melted
2 eggs, beaten 1 cup buttermilk 1/4 cup honey 1/4 granulated sugar 1 cup self-rising flour 1 cup cornmeal Mix wet ingredients together, then add flour and cornmeal. Mix until incorporated, but don’t over mix. On preheated griddle, rubbed with oil or butter, drop 1/4 cup of batter, cook until bubbles form on top and edges begin to look cooked, flip and cook other side until golden brown. Serve with brown sugar syrup Use equal parts brown sugar and water, heat to boiling and then turn off burner, and stir. Allow to cool a bit before serving.
